Natural tartar is intended for use as a food additive. For example, it can be used as a raising agent, to stabilise beaten egg whites and whipped cream, to prevent sugar syrup from crystallising, and to stop cooked vegetables from discolouring.
Preparation
When combined with bicarbonate of soda and a separating agent such as cornflour, cream of tartar produces a phosphate-free baking powder that can be used in a wide range of sweet and savoury baked goods.
