Die sonnenverwöhnten Bergfeigen wachsen vorwiegend im Aydin-Germencik Gebiet. Die getrockneten Feigen werden geklippt, d.h. der Stil wird entfernt. Die ballaststoffreichen Früchte sind beliebt als Snack und eignen sich zudem zum Kochen und Backen. Im Sommer, vor dem Eintreffen der neuen Ernte, zuckern die Feigen vermehrt aus, was die Qualität jedoch nicht beeinträchtigt. Ganz im Gegenteil: Die Auszuckerung stellt einen ganz natürlichen Vorgang dar. Bei der Trocknung der Früchte bleibt eine Restfeuchtigkeit bestehen, die sich im Laufe der Aufbewahrungszeit verringert und nach außen tritt. Mit diesem Wasser gelangt auch Fruchtzucker auf die Außenfläche der Trockenfrucht, der dann dort trocknet und als weiße Schicht zu sehen ist.
