Mature, dried green lentils with a firm consistency. The lentils are dark green marbled, round, flat, and particularly small, with a distinctly nutty flavour. The green lentil is a particularly noble variety of lentil and is grown in Canada. These lentils have a low fat content, high fibre content, and are a good source of protein. They are firm-cooking and therefore particularly suitable for salads, soups, and as a side dish.
Preparation
Rinse the lentils under running water and cook in twice to three times the amount of water for 20 to 30 minutes. Season the lentils to taste during cooking. A little vinegar, caraway, fennel, or ginger can aid digestion.
