Our European millet has a mildly sweet, nutty flavour, serves as a source of fibre, and is a well-tolerated cooking ingredient. Excellent for sweet and savoury dishes: as a side dish, pan dish, filling, porridge, or even ground or milled as an ingredient for baked goods.
Preparation
Side dish for 4 people: Cook 1 cup of millet in 350 ml of water or milk for about 5 minutes. Reduce heat and let soak for 15 min, then season. Versatile, can be used savoury or sweet with vegetables, herbs, or fruit, for casseroles, patties, soups, or porridge.
