Arrowroot starch is a versatile binding agent derived from the tropical arrowroot tuber plant. Ideal for thickening both cold and hot dishes without making the liquid turn milky.
Preparation
A perfect thickener for vegetable and meat dishes, casseroles, soups, sauces, jellies, jams, and puddings. Dissolve 2 to 3 level teaspoons in cold water, stir into 250 ml of liquid, and bring to a boil briefly. Egg substitute: 3 tablespoons + 1 tablespoon water. Use 40 g of arrowroot starch for every 1.000 g of flour in baking. Arrowroot starch can also be used for coating: simply mix it with water and apply as usual.
