To produce the finest organic candied lemon peel, the rinds are cut into cubes, treated with steam and drained. Corn starch syrup is then added, which, through osmosis, penetrates the capillaries of the fruit peel and replaces the water. This gives the product its characteristic texture and long shelf life. Organic candied lemon peel is ideal for making seasonal baked goods such as Easter bread, fruit bread, Christmas stollen, gingerbread, Florentines and desserts.
Preparation
Traditionally, organic candied lemon peel is used in Christmas baked goods such as stollen and gingerbread. However, it can also be used to enhance Easter breads, fruit breads, yeast plaits, fruit cakes, muffins, Florentines, and various other desserts, such as cassata.
