Mature, dried green beans with a firm consistency. They are small and green, have white lines, and possess a nutty-mild flavour. The beans are cleaned and packed after harvesting. They are popular in Ayurvedic cuisine for Dal, curries, soups, and combined with rice and vegetables.
Preparation
Soak Mung beans for 1-2 hours and then rinse under running water. Cook 1 cup of beans with 3 cups of water for approximately 45-60 minutes on low heat. Salt only after cooking. A classic in Asian cuisine for soups and stews. Also popular as sprouts for salads.
