Gelling sugar for the preparation of fruit spreads (2:1) based on cane sugar.
Preparation
Mix 1 kg of ripe, chopped fruit or 700ml of juice with 500g of gelling sugar and bring to a boil while stirring. Let it boil for at least 2-3 minutes while stirring constantly. Fill the boiling hot jam into clean jars to the brim, screw on the lid and turn it upside down on the lid for about 5 minutes. For fruits with low pectin content (e.g. mango, peach, strawberry) add lemon juice or grated apple.
