The spherical grains of our organic brown mustard seeds are blackish brown to brown in colour and have a pungent aroma. This dark variety is not yet as widespread in Europe as yellow mustard seeds. In India, however, it has always been valued in a variety of dishes: hearty lentil dishes (dhals), chutneys and marinades benefit from its wonderful aroma and distinctive pungency. Light roasting intensifies its aroma even further. Let your creativity run wild in the kitchen and try these little flavour wonders not only in Indian dishes, but also in pickles, marinades and finely ground in soups, sauces and dressings. Did you know? The darker the mustard seed, the more pronounced its spiciness. Yellow mustard seeds are the mildest, followed by brown seeds and the small black aromatic balls.
