Dried and ground chilli peppers. This red to reddish-brown powder is very hot to fiery, slightly fruity and has a fine texture. The production of our chilli powder begins with the careful selection and harvesting of ripe red chillies. They are then gently dried to preserve their rich, spicy flavour and vibrant red colour. Finally, the dried chillies are finely ground.
The level of heat may vary depending on the batch and availability. Chillies with a Scoville rating of 50,000 correspond to approximately an 8 on a heat scale of 1 to 10, placing them at the upper end of the medium-hot range and making them comparable to a typical cayenne pepper.

As well as their size, they differ in flavour, which ranges from fruity to very hot. The compound capsaicin is responsible for the heat, which is measured on the Scoville scale.
