How does bergamot differ from other citrus fruits such as orange, lemon or grapefruit? Bergamot is smaller and pear-shaped. Its light green to yellow skin is thinner and smoother than that of most other citrus fruits. It is not usually eaten, but is cultivated to extract its intense essential oil.
Preparation
Pour boiling water over one heaped teaspoon per cup and let the tea steep for 3-5 minutes.
