Cornmeal is ideal for preparing polenta or other fibre-rich baked goods and dough products made from cornmeal.
Preparation
Stir 250g of cornmeal into 1L of salted water or vegetable broth, cook for 10 minutes on low heat while stirring. Then let it sit for 15 minutes. Serve as a side dish. Or spread on a baking sheet, let it firm up, cut into diamonds and fry in oil.
