Guar gum is a plant-based thickening agent derived from the seeds of the guar plant. It is naturally gluten-free and binds without cooking, making it suitable for cold desserts, chilled dishes, dips, as well as hot dishes like soups, egg-free casseroles, and vegetable dishes.
Preparation
Dosage: For sauces and soups, use 2 g (one level teaspoon) per 250 ml of liquid. If a slightly firmer bind is needed, such as for ice cream, creams, or desserts, use 4 g per 250 ml of liquid.
