Known as the 'Stone Age Wheat' or 'Two-grain', Emmer boasts a similarly hard grain to durum wheat. It is a hearty, flavourful ancient grain that is easy to digest. Emmer provides a good source of protein and is high in fibre. It can be used in side dishes, soups, pan-fried dishes, salads, or even ground for baked goods and porridges.

Einkorn is an ancient grain and relative to our modern wheat. It has a nutty, grainy flavour. The fine wholemeal flour produced from it is particularly suitable for baked goods and desserts. The whole grain can also be prepared excellently like rice as a risotto.

Quinoa is considered a pseudo-cereal and is prepared similarly to grains. The early harvested spelt, without the developed starch, has a juicy-soft kernel and is dried through a process called drying (smoking).
