Gluten is a glue protein and is one of the allergens that must be declared. This wheat gluten powder can be used as a stabilising baking ingredient and is ideal for making seitan. Mix wheat gluten with the desired dry spices, add water and liquid seasonings such as soy sauce if desired, and knead well. One part gluten, one part water. If the dough is too firm, add a little more water. Now choose the desired cooking method: cook, bake or fry.

Organic barley malt extract is a highly viscous, golden-brown, malt-aromatic, and sweet extract. It is used in baking mixes and baking agents and is suitable for improving the baking properties of bread and rolls.

Sekowa Backferment is a natural leavening and dough relaxing agent made from corn flour, pea flour, and blossom honey. The leavening power of Backferment also works in doughs made from grains that are difficult to bake such as barley and oats, as well as non-bakeable varieties such as corn, millet, or buckwheat. Sekowa Backferment contains a variety of natural acids and nectar yeasts, making the use of yeast unnecessary. Use approximately 3 g of Backferment per 100 g of flour.
