We offer organic ceremonial-grade matcha of outstanding quality from the volcanic island of Jeju in South Korea. This exceptional product is made according to traditional Japanese methods. The tea plants are shaded prior to harvesting. This has a noticeable effect on the quality of the tea. The leaves develop fewer bitter compounds and more chlorophyll, caffeine, amino acids and the desired umami flavour. After careful harvesting, the leaves are stripped of their veins, sterilised with steam and dried immediately. They are then packaged professionally and stored until grinding. To preserve the tea's unique qualities, grinding is carried out in slow-running or cooled mills to prevent the powder from heating up.
