Organic Christmas – for baking, snacking and gift-giving
Christmas tastes of cinnamon, roasted nuts and fresh baked goods. Our winter range brings together everything you need for the Advent season: natural nut kernels, fine baking ingredients, genuine Ceylon cinnamon, winter snacks and dried fruit – all in organic quality. Whether you’re baking for the family or buying in bulk as a business customer, most items are available in both handy sachets and bulk packs. We’ve organised everything according to what you have in mind: baking, snacking, seasoning or gift-giving.
Baking: the basics of Christmas baking
Cinnamon stars, vanilla crescents, stollen: the flavour of Christmas biscuits stands or falls on the ingredients. For classic biscuits, use ground almonds or hazelnuts. These add flavour and help bind the mixture. Depending on the recipe, chopped, flaked or slivered almonds, roasted hazelnuts, walnuts and pecans can be added to vary the range.
For coating and decorating, use chocolate coating in drops rather than simple cake icing: chocolate coating has a higher cocoa butter content, melts more evenly and has a glossy finish once dry. Add to this Bourbon vanilla, genuine Ceylon cinnamon, vanilla sugar and baking powder, and you have all the essentials. Dried fruits such as figs, dates and sultanas belong in every stollen and fruit loaf.
For commercial use & resale: All baking ingredients are available in bulk packs, with many also available in smaller packs to suit every need. Origin and certification details are provided on every product page.
Snacking: the colourful plate
The colourful platter thrives on variety: crunchy nuts, sweet fruit, a touch of chocolate. Our winter special is the ‘Winter Sun’, a nut, fruit and chocolate mix that strikes just the right balance and is perfect for snacking straight from the bowl. If you fancy something spicy and sweet, try the cinnamon almonds: roasted almonds, lightly sweetened and coated in cinnamon.
Also available: roasted, salted pistachios in their shells, green pistachio kernels, cashews and the berry trio. For the chocolate lovers: chocolate-coated peanuts and sultanas in dark chocolate. Trail mix and nut mixes offer the perfect variety in a single blend.
For businesses & resale: ‘Winter Sun’ is available as a seasonal product in 12.5kg, 5kg and 1kg packs. Ideal for loose goods, gift hampers or the festive display counter. Other snacks are available in bulk packs and in smaller retail packs.
Gifts: Presents from the winter range
An edible gift is always well received, provided the quality is right. Premium single varieties such as macadamia nuts, green pistachios and pecan kernels make particularly good gifts, as do Medjool dates and vacuum-dried apple rings – a naturally sweet snack – and chocolate-coated fruit. The ‘Winter Sun’ nut and fruit mix looks lovely in jars or bags. Combine two or three varieties to create a small selection – and your personalised gift is ready. For business & resale: For corporate gifts and gift hampers, we supply all varieties in bulk packaging and loose, ideal for your own repackaging and assembly. Please contact us for larger quantities and volume discounts.
Crisp fruit: freeze-dried & vacuum-dried
Crisp and crunchy: freeze-dried and vacuum-dried organic fruit is the modern way to snack. It’s light and airy, and crunches when you bite into it. Our organic apple rings contain just one ingredient: apple. All the sweetness comes from the fruit itself, with no added sugar.
At Christmas time, the crispy apple slices with a hint of cinnamon and apple syrup perfectly capture the flavour of the season; those who prefer them plain can opt for the unflavoured version.
The key is the gentle vacuum-drying process: this involves removing water from the fruit at a low temperature and under reduced pressure, without freezing it first. This requires less energy than traditional freeze-drying and produces a similarly crisp result, whilst preserving freshness and valuable nutrients. What’s more, this crunchy snack is incredibly practical: no squashed bits, no sticky fingers – simply pop it in your lunchbox, take it to the office, pack it in your rucksack or add it to a colourful platter.
For commercial use & resale: Apple rings in 300 g, 1.5 kg and 6 kg packs; apple slices and apple slices with cinnamon in 300 g, 2.5 kg and 10 kg packs: ideal for repackaging, snack shelves and the catering trade. Please enquire about pallet prices for larger quantities.
Dried fruit: the natural sweetness of the Advent season
Dried fruit is the natural sweetness of the Advent season: enjoyed on its own, baked into stollen or arranged on a colourful platter. Medjool dates are particularly large, soft and caramel-like, and are known as ‘Nature’s Candy’. Figs and apricots add a fruity depth, whilst sultanas are a must in every stollen and fruit loaf. All varieties contain no added refined sugar, as the sweetness comes from the fruit itself.
For businesses and resale: dried fruit in bulk packs, ideal for muesli, baking and snack mixes, as well as for repackaging.
Spices: the classic Christmas spices
The scent of Christmas comes from the spice jar: cinnamon, ginger, cardamom, coriander and aniseed are the classic Christmas spices. They form the basis of gingerbread, speculoos, aniseed biscuits and stollen. If you want to make things easy for yourself, go for a ready-mixed stollen spice blend; if you prefer to mix your own, combine the individual spices to create your own gingerbread spice blend. All varieties are available ground and ready to use, or whole.
When it comes to cinnamon, it’s worth paying attention to the variety: Ceylon cinnamon (‘true cinnamon’) has a mild flavour and is naturally low in coumarin, whilst Cassia cinnamon is stronger but higher in coumarin. In winter cooking, these same spices add the finishing touch to mulled wine, baked apples, rice pudding and red cabbage, along with a hint of ground Bourbon vanilla for desserts and custards.
Tip - Make your own gingerbread spice mix: equal parts cinnamon, ginger, coriander, cardamom and aniseed make a classic base, which you can adjust to taste. That way, you don’t need a ready-made mix and you know exactly what’s in it.
For commercial use & resale: Spices in bulk packs for bakeries, the catering trade and manufacturers, as well as in smaller retail packs for smaller quantities and resale.
Which nuts are best for Christmas baking?
Ground almonds and roasted hazelnuts are best suited to traditional biscuits, as they add flavour and help bind the mixture together. For stollen and fruit bread, walnuts, pecans and dried fruit are also added.
Why are organic dried apricots brown rather than bright orange?
Because organic dried fruit must not be treated with sulphur. The bright orange colour of conventionally grown apricots is caused by sulphur dioxide (E220), which prevents natural browning. Without sulphur, apricots turn brown naturally; this dark colour is a sign of quality.
Ceylon or Cassia cinnamon: which is better?
Ceylon cinnamon (‘true cinnamon’) has a milder flavour and is low in coumarin, whilst cassia cinnamon has a stronger flavour but is higher in coumarin. Anyone who uses a lot of cinnamon on a regular basis should opt for Ceylon.
How does couverture differ from ordinary cake icing?
Chocolate coating has a higher cocoa butter content, melts more evenly and has a glossy finish once dry. This makes it more suitable for coating and decorating biscuits than a simple cake glaze.
Is trail mix healthy?
Nut and fruit mixes provide unsaturated fatty acids, fibre and minerals. They are rich in nutrients but also high in calories: a good snack when eaten in moderation.
What ingredients do I need to make cinnamon stars?
To make cinnamon stars, you’ll need ground almonds, cinnamon, egg white and icing sugar. Important: use ground almonds rather than almond flour to ensure the dough remains smooth.
What spices do you need for gingerbread and stollen?
Traditional gingerbread spice consists of cinnamon, ginger, coriander, cardamom and aniseed, often supplemented with cloves and allspice. For stollen, you can use ready-made stollen spice mix or make your own using the same individual spices.
Are these products also available in bulk packaging for commercial use?
Yes. All products are available in bulk packs as well as, for the most part, in household sizes, e.g. ‘Wintersonne’ in sizes ranging from 12.5 kg to 1 kg and baking powder in sizes ranging from 25 kg to 1 kg. Please do get in touch with us to discuss volume discounts.
