We only use European almonds! They have a distinctly nuttier and more aromatic taste compared to overseas almonds. The almond kernels have light to medium brown skin and are mostly 10 to 14 mm in size. An ounce (approx. 28g) contains about 27 to 30 pieces. Almonds are a great source of fibre and protein. Organic maple syrup is made from the sap of certain maple trees. Harvesting takes place in the spring, when the sap is replenishing the upper parts of the tree after a long winter. To ensure that the tree remains healthy and can provide its sweet sap for many years to come, only part of the sap is taken from trees that are already large enough. Immediately after harvesting, the sap is boiled down and then bottled. The resulting maple syrup is more liquid than honey and has a sweet taste with nutty, caramel-like, slightly bitter notes. The time of harvest influences the taste and colour of the syrup. Grade A is a light amber syrup with a mild aromatic flavor. It is ideal for topping our popular pancakes, but is also a great choice for sweetening baked goods, desserts, dressings and drinks.

Crisp fruit: freeze-dried & vacuum-dried
Crisp and crunchy: freeze-dried and vacuum-dried organic fruit is the modern way to snack. It’s light and airy, and crunches when you bite into it. Our organic apple rings contain just one ingredient: apple. All the sweetness comes from the fruit itself, with no added sugar.
At Christmas time, the crispy apple slices with a hint of cinnamon and apple syrup perfectly capture the flavour of the season; those who prefer them plain can opt for the unflavoured version.
The key is the gentle vacuum-drying process: this involves removing water from the fruit at a low temperature and under reduced pressure, without freezing it first. This requires less energy than traditional freeze-drying and produces a similarly crisp result, whilst preserving freshness and valuable nutrients. What’s more, this crunchy snack is incredibly practical: no squashed bits, no sticky fingers – simply pop it in your lunchbox, take it to the office, pack it in your rucksack or add it to a colourful platter.

Medjool dates are particularly large, soft and caramel-like, and are known as ‘Nature’s Candy’. Figs and apricots add a fruity depth, whilst sultanas are a must in every stollen and fruit loaf. All varieties contain no added refined sugar, as the sweetness comes from the fruit itself.

Spices: the classic Christmas spices
The scent of Christmas comes from the spice jar: cinnamon, ginger, cardamom, coriander and aniseed are the classic Christmas spices. If you want to make things easy for yourself, go for a ready-mixed stollen spice blend; if you prefer to mix your own, combine the individual spices to create your own gingerbread spice blend. All varieties are available ground and ready to use, or whole.
When it comes to cinnamon, it’s worth paying attention to the variety: Ceylon cinnamon (‘true cinnamon’) has a mild flavour and is naturally low in coumarin, whilst Cassia cinnamon is stronger but higher in coumarin. In winter cooking, these same spices add the finishing touch to mulled wine, baked apples, rice pudding and red cabbage, along with a hint of ground Bourbon vanilla for desserts and custards.
Tip - Make your own gingerbread spice mix: equal parts cinnamon, ginger, coriander, cardamom and aniseed make a classic base, which you can adjust to taste. That way, you don’t need a ready-made mix and you know exactly what’s in it.

Which nuts are best for Christmas baking?
Ground almonds and roasted hazelnuts are best suited to traditional biscuits, as they add flavour and help bind the mixture together. For stollen and fruit bread, walnuts, pecans and dried fruit are also added.
Why are organic dried apricots brown rather than bright orange?
Because organic dried fruit must not be treated with sulphur. The bright orange colour of conventionally grown apricots is caused by sulphur dioxide (E220), which prevents natural browning. Without sulphur, apricots turn brown naturally; this dark colour is a sign of quality.
Ceylon or Cassia cinnamon: which is better?
Ceylon cinnamon (‘true cinnamon’) has a milder flavour and is low in coumarin, whilst cassia cinnamon has a stronger flavour but is higher in coumarin. Anyone who uses a lot of cinnamon on a regular basis should opt for Ceylon.
How does couverture differ from ordinary cake icing?
Chocolate coating has a higher cocoa butter content, melts more evenly and has a glossy finish once dry. This makes it more suitable for coating and decorating biscuits than a simple cake glaze.
Is trail mix healthy?
Nut and fruit mixes provide unsaturated fatty acids, fibre and minerals. They are rich in nutrients but also high in calories: a good snack when eaten in moderation.
What ingredients do I need to make cinnamon stars?
To make cinnamon stars, you’ll need ground almonds, cinnamon, egg white and icing sugar. Important: use ground almonds rather than almond flour to ensure the dough remains smooth.
What spices do you need for gingerbread and stollen?
Traditional gingerbread spice consists of cinnamon, ginger, coriander, cardamom and aniseed, often supplemented with cloves and allspice. For stollen, you can use ready-made stollen spice mix or make your own using the same individual spices.
